Haleem

First of all Eid Mubarak to all my friends.Eid is the biggest festival for Muslims followed by Ramadan. Ramadan or Ramzan is the ninth month of Islamic calender and considered to be the most sacred month. I still remember during Ramzan my Mom used to fast for a month long and everyday evening during Iftar which is fast breaking time when she drinks water after waiting for the whole day, we used to sit together to have fruits and some really yummy preparation. Today I am gonna share one of my favorite preparation during Ramzan from my Mom's kitchen.
Yes you guessed it right. I am talking about Haleem. This is the recipe made with red meat, lentils and spices.So lets start preparing Haleem.



Ingredients:

  • Peas Split 1/2 cup (Matar dal)
  • Green Gram Lentil 1/2 cup(Moong Dal)
  • Red Lentil 1/2 cup (Masoor Dal)
  • Split Chickpeas 1 cup (Chana Dal/Cholar dal)
  • Split Black Gram 1/2 cup (Urad Dal/Arhar Dal)
  • Mutton 500gms
  • Onion paste 1cup
  • Ginger-garlic paste 2 tablespoon
  • 4green cardamom(elach)
  • 5-6 cloves(labongo)
  • 1cinnamon stick(daruchini)
  • 2 mace(joyetri)
  • 1/4th nutmeg(jayfol)
  • 1 teaspoon black cumin seed(sahi jire)
  • 1 teaspoon white pepper seed(sah morich)
  • 1 teaspoon cumin powder.
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala powder.
  • 1 bay leaf.
  • salt as per taste.
  • 1/2 cup white oil.
  • 2 tablespoon desi ghee.
Process:
  • Take a nonstick pan  and dry roast cardamom,cinnamon,cloves,mace,nutmeg,white pepper and black cumin seed. Then grind it in a grinder to get the Special Masala
  •   Soak all the lentils overnight and then cook it in pressure cooker with water & pinch of turmeric powder upto 4-5 whistle.Make sure all the lentils cook very well and get completely mix with each other. If required you can smash it with spatula or can put it for another 1-2 whistle.
  •  Take another pressure cooker and put it in high heat. Add oil and let it warm up a little. Then add bay leaf and onion paste.let the onion become light brown and then add the meat. One very important thing in this recipe is you have to use red meat. You can try with chicken but it does not come out that tasty.
  • Then add all the other masala except ghee and mix it very well. Add half of the special masala that we prepared and give a gentle stir.
  • Cook it in high heat till it start releasing oil from the masala.Then add about 2 cups of water and cover the lid of the cooker. Lower the heat of your oven and slowly cook it until 3-4 whistle.
  • Let it cool down a little then open the lid of the cooker. Pour the lentil(dal) mixture into it and mix it really well. Then put it in medium heat and pour some extra salt whichever is required for the dal.Add special masala and little bit of water so all the masala get incorporated properly into the gravy.
  • After that pour it on a serving bowl and add Ghee from top. Garnish with chopped coriander and fried onion and serve it with Rumali Roti or Nun , or have it as it is.
  • Chop some onion,green chili,coriander and add some salt and lemon juice on that. Sprinkle this mixture on top of Haleem and believe me it gives added taste to this mouth watering recipe.
