Haleem

First of all Eid Mubarak to all my friends.Eid is the biggest festival for Muslims followed by Ramadan. Ramadan or Ramzan is the ninth month of Islamic calender and considered to be the most sacred month. I still remember during Ramzan my Mom used to fast for a month long and everyday evening during Iftar which is fast breaking time when she drinks water after waiting for the whole day, we used to sit together to have fruits and some really yummy preparation. Today I am gonna share one of my favorite preparation during Ramzan from my Mom's kitchen.
Yes you guessed it right. I am talking about Haleem. This is the recipe made with red meat, lentils and spices.So lets start preparing Haleem.



Ingredients:

  • Peas Split 1/2 cup (Matar dal)
  • Green Gram Lentil 1/2 cup(Moong Dal)
  • Red Lentil 1/2 cup (Masoor Dal)
  • Split Chickpeas 1 cup (Chana Dal/Cholar dal)
  • Split Black Gram 1/2 cup (Urad Dal/Arhar Dal)
  • Mutton 500gms
  • Onion paste 1cup
  • Ginger-garlic paste 2 tablespoon
  • 4green cardamom(elach)
  • 5-6 cloves(labongo)
  • 1cinnamon stick(daruchini)
  • 2 mace(joyetri)
  • 1/4th nutmeg(jayfol)
  • 1 teaspoon black cumin seed(sahi jire)
  • 1 teaspoon white pepper seed(sah morich)
  • 1 teaspoon cumin powder.
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala powder.
  • 1 bay leaf.
  • salt as per taste.
  • 1/2 cup white oil.
  • 2 tablespoon desi ghee.
Process:
  • Take a nonstick pan  and dry roast cardamom,cinnamon,cloves,mace,nutmeg,white pepper and black cumin seed. Then grind it in a grinder to get the Special Masala
  •   Soak all the lentils overnight and then cook it in pressure cooker with water & pinch of turmeric powder upto 4-5 whistle.Make sure all the lentils cook very well and get completely mix with each other. If required you can smash it with spatula or can put it for another 1-2 whistle.
  •  Take another pressure cooker and put it in high heat. Add oil and let it warm up a little. Then add bay leaf and onion paste.let the onion become light brown and then add the meat. One very important thing in this recipe is you have to use red meat. You can try with chicken but it does not come out that tasty.
  • Then add all the other masala except ghee and mix it very well. Add half of the special masala that we prepared and give a gentle stir.
  • Cook it in high heat till it start releasing oil from the masala.Then add about 2 cups of water and cover the lid of the cooker. Lower the heat of your oven and slowly cook it until 3-4 whistle.
  • Let it cool down a little then open the lid of the cooker. Pour the lentil(dal) mixture into it and mix it really well. Then put it in medium heat and pour some extra salt whichever is required for the dal.Add special masala and little bit of water so all the masala get incorporated properly into the gravy.
  • After that pour it on a serving bowl and add Ghee from top. Garnish with chopped coriander and fried onion and serve it with Rumali Roti or Nun , or have it as it is.
  • Chop some onion,green chili,coriander and add some salt and lemon juice on that. Sprinkle this mixture on top of Haleem and believe me it gives added taste to this mouth watering recipe.

Chicken Pizza

Today's recipe does not need any introduction and it is famous amongst all age group. Yes I am talking about Pizza. So lets start making Chicken Pizza.



Ingredients:
  • Boneless chicken pieces 150gms
  • Flour 2 cups
  • Sliced onion 1cup
  • Sliced red and green bell pepper (capsicum)  1 cup
  • 1cup tomato paste
  • 1/2 teaspoon ginger garlic paste
  • 1 teaspoon chopped garlic
  • 1 teaspoon chili flakes
  • 2 teaspoon dry yeast powder
  • salt as per taste
  • 1 teaspoon red chili powder
  • 1 tablespoon white oil
  • 1-2 cups of shredded mozzarella cheese
  • 1 teaspoon sugar

Procedure:
  • Take two cups of  lukewarm water ,add 2 teaspoon dry east powder and 1 teaspoon sugar on that.Give a gentle stir with a spoon and let it rest for 15-20 mins. After 20mins you can see that the yeast has been expanded in your water.
  • Take a bowl, pour flour on it, add salt,white oil and then pour the yeast water to make a dough. Do add all the water at time. Add little bit first and then keep on adding as required to make the dough. Then we need to kneed the dough very well until it become so smooth that it no longer stick on your fingers. You can add flour if needed while doing the process.Then put the dough in a air tight container and let it rest for another 30-40mins.
  • After 30mins it will rise just double the size it was before.
  • Now let make the pizza sauce.Take a non-stick pan, add tomato paste,chopped garlic,some salt and  1/2 teaspoon of chili powder. Let it boil then pour it in a bowl.
  • Now take some oil (about 3-4 teaspoon) in a non-stick pan and put it in high heat.Add chicken ,salt,ginger garlic paste and 1/2 teaspoon red chili powder and fry it in high flame until it become light brown.
  • Now take out the Pizza dough and roll it roughly with a roller or u can use just your hand to give it a round shape.Place it in a round shape baking tray.
  • Pour the pizza sauce on top of it and spread it evenly.
  • Pour the fried chicken,onions and bell peppers on top of that.
  • Sprinkle all the cheese on top of it. and then sprinkle some chili flakes on top.You can avoid putting chili flakes if you don't want to make it hot.And you can increase or decrease the amount of cheese as well. Like I used 1 cup only because we had a heavy dinner waiting for that day as well.But I would recommend you to use 2 cups because it will enhance the taste . And if you are eating it once in a while it is perfectly fine to use 2 cups.
  • Preheat your oven at 360 degree Fahrenheit or 180 degree Celsius.
  • Bake your Pizza for 15mins. After 15 mins increase the heat to 400 degree Fahrenheit and then bake it for another 5-8 mins. Those who are in India they might not have micro-oven which support more than 180 degree. So you can just bake it on only 180 degrees for 20-25mins.The last 5 mins is just to make the pizza crispy from outside.  
  • After 20 min serve it hot with your favorite cold drinks.
  • For my vegetarian friend : just replace the chicken with Paneer cubes(no ginger-garlic paste in it) and follow the rest of the process as it is. And believe me the Paneer Pizza will be equally tasty like chicken Pizza.

Stuffed Fish

After a much awaited long tour at Yellowstone National Park and South Dakota its time to share some recipe. Today I will share one fish recipe. This is not our traditional Bengali fish recipe rather  its a paneer-fish recipe. So lets gets started.



Ingredients:

  For stuffing:
  • Paneer socked in water(100gms)
  • Chopped red and green bell pepper about 1/2 cup
  • Chopped coriander 2-3 teaspoon
  • Chopped green chili 1 teaspoon
  • Salt as per taste
Other ingredients:
  • Vetki/Telapia Filet 6
  • 1cup gram flour(besan)
  • 2 teaspoon of rice flour
  • 1 teaspoon of semolina(suji)
  • salt as per taste
  • Red chili powder 1/3 rd teaspoon.
  • lemon juice 2 teaspoon
  • ginger garlic paste 1/3rd teaspoon.
  • White Oil for frying
Procedure:
  • smashed the paneer with your hand or a spoon and add all other ingredients into it.Mix it really well.
  •  Marinate the fish with lemon juice ,salt and ginger garlic paste.Then we need to cut the fish in such a way so that it looks like a open book.and we can easily put our stuffing there.
  • Now put the stuffing in one side of the filet and then cover it with the other part.

  • Make a batter with gram flour,rice flour,semolina,salt,red chili powder,1 teaspoon of oil and some water.Make a thick batter with those.
  • Pour some oil in a non-stick pan and put it in high flame to deep fry those fish.
  • Put those filet into the batter very carefully and deep fry it until it become light brown.
  • Serve it with sauce or salad as a side dish or as a snack.
