Mutton with Cabbage


Ingredients:
Mutton 300gms,1/2 small size cabbage cut in julian,1 potato (cut it in equal 4 piece like dice)1 sliced onion, ginger paste 1 teaspoon,garlic paste 1 teaspoon,1-2 teaspoon garam mashala powder,red chili powder 1 teaspoon,cumin powder 1 teaspoon,coriander powder  1/2 teaspoon,turmeric powder 1/2 teaspoon,1bay leaf,whole garam masala consist of 2 Cardamom(elach),2 cloves(labongo)and 1 Cinnamon(daruchini),salt,3-4 tablespoon white oil(vegetable or olive)

Process:
We will do the preparation in pressure cooker.First of all put your pressure cooker on high flame and add oil in it.Once the oil warmed up add whole garam masala and bay leaf on that.Now add sliced onion and fry it until it turns into light brown.Then add the cabbage and fry it about 5-7min. After that add mutton, potato,ginger garlic paste,chili powder,coriander powder,turmeric powder,cumin powder,garam masala powder and salt one by one.Mix it really well and cook it on high flame till oil came out from the gravy(valo kore koshe nite hobe).After that add 1 cup of water and put on the lid of the cooker and let it whistle for 3-4 times.Now your Mutton with cabbage is ready to serve..

Soya Cabbage

This recipe is perfect for those people like me who hate cabbage and like my husband who love cabbage but hate soya nuggets.
Ingredients:
1/2 small size cabbage cutted in julian,Soya chunk 15-20 piece,1small size diced potato,2 Jalapeno(achari lonka)(cut in small rings),1/2 sliced red capcicum,1 small size sliced onion ,1 teaspoon ginger garlic paste,2 teaspoon suger,1/2 teaspoon turmeric powder,1/2 teaspoon chili powder,1 teaspoon garam mashala powder,1/2 teaspoon cumin powder,2-3 teaspoon tomato sauce,salt as per taste, white oil 6-7teaspoon.

Process:
Soak the soya chunk in hot water for about 10min.Now remove it from water and squeeze it to remove the excess water from it.Now take a oven proof bowl, add cabbage and about 2 cups of water and put it in micro for 10mins.If you dont have micro oven you can boil it in normal oven for 10min and then drain the water from it.After that take a frying pan,put it in medium heat and add 2-3 teaspoon of oil in it.Now add all diced potato about 1/6th teaspoon of turmeric powder and salt(as per taste) and fry it really well.Then add soya chunks in it and fry this(alu & soya chunk) for about 5 mins.Now take those out in a separate bowl and again add the rest of the oil in the frying pan.When the oil warm up a little add sliced onion and fry it until it gets light brown.Then add boiled cabbage,sliced red capcicum,jalapeno,ginger garlic paste one by one and mix it well and cook it for abot 5-7 mins or until the raw flame of ginger garlic goes off.Now add fried potato and soya nuggets along with all the spices except tomato sauce and mix it really well.You may add a little bit of water while doing the process and cook it for 5 min or more until oil comes out from it.Now add about 1/2 cup of water,cover it with the lid  and cook it in low flame for 10min.After that switch off your oven,add the tomato sauce in it and mix it properly and again cover it with lid for 5min.After 5mins your Soya Cabbage is ready to serve with rice or Roti whatever you prefer :)

Cabbage Chana

This is a unique recipe where I have combined cabbage and Garbanzo Beans(kabuli chola) together.In India people generally have Garbanzo Beans with Bhatura but today we will learn something new with it.
Ingredients:
1/2 sliced Cabbage(small size), 1 cup Garbanzo Beans (overnight soaked in water) ,1/2 medium size sliced onion , 1 diced potato, 1/2 teaspoon ginger paste,1/2 teaspoon garlic paste, chana masala 1-2teaspoon,1/2 teaspoon cumin powder,1/2 teaspoon coriander powder,1/2 teaspoon red chili powder,1/2 teaspoon turmeric powder,6-7 teaspoon chopped coriander(dhone pata),salt(as per taste),5-6 teaspoon olive oil/vegetable oil

Process:
First of all take a bowl ,add sliced cabbage and water and boil it for 10mins either in micro-oven or in normal oven.Then drain the water and put it in different container.Now take a frying pan,add some oil in it it put it in high flame.Add sliced onion in it and fry it until the gets a nice light brown color.Then add boiled cabbage,diced potato and garbanzo beans in it. Now add all the spices (except chopped coriander) and keep mixing it till the raw flavor of ginger and garlic vanished.After that add some chopped coriander and about 1/2 cup of water,put on the lid and cook it in low flame for about 7-9mins.After 9mins add some chana masala and chopped coriander and serve it with rotis or nuns.... :)

Chicken Corn Soup

This preparation is for one of my special Didi.....very easy to cook and very healthy....MantuDi this is for u... :)






Ingredients:
Boneless chicken sliced in small pieces 100gm,sweet corn 5-6 tablespoon,chopped carrot 2-3 teaspoon,chopped beans 2-3 teaspoon,1egg,cornflour 1teaspoon,chopped spring onion 1-2 teaspoon,chopped ginger 1-2 teaspoon,soya sauce 1 teaspoon,1/2 teaspoon ginger garlic paste,salt(as per taste),black pepper powder 1 teaspoon,butter 1 teaspoon

Procedure:
First of all take the chicken,add salt,pepper, ginger garlic paste,water and boil it for about 10-15min.
Now take out the chicken stock in a diierent container.Then take a frying pan,put it on a medium flame and add butter,spring onion,ginger,carrot,beans,sweet corn and boiled chicken one by one.Now shallow fry it for about 2-3 mins and then add the chicken stock.Let it boil and at boiling time break the egg and directly put it in the stock and then stir it properly so that the egg got mixed with the stock.Now add some salt and soya sauce and about 1/2 cup of water and let it boil again.Then take a small bowl, add 1 teaspoon of cornflour and 4-5 teaspoon of water and mix it really well.
Then add this mixture into the soup and continuously stir it till the consistency of the soup changes and it become thicker.
Then serve it with croissant or just as it is.... :)

Mughlai Paratha/Moglai Porota

 Mughlai Paratha is a crispy paratha with chicken or egg stuffing inside.It is very famous in Bengal and served with   potato curry and salad.There is no particular history found for this dish whether it is actually introduced by Mughal's or not,but for it's Badsahi look and feel it is named as Mughlai Paratha.Though you have to put a lot of effort to make Mughlai Paratha at home but when you are done, the end result is awesome and beyond any comparison. I am not sure if my friends who are in India now will give a try or not, but I am quite sure that my overseas friend will definitely try it.



 Ingredients: 

For the dough:
  • Flour 4 cup
  • 1 egg
  • 2-3 tablespoon oil
  • 1/2 teaspoon salt
  • water as required
 For Stuffing:
  • Chopped onion 1cup
  • Chopped tomato 1 cup
  • Chopped green chili 3-4 teaspoon
  • Chopped coriander 1 cup
  • Boneless chicken 300gms(cut in small squares) (optional)
  • 1/2 teaspoon ginger garlic paste(optional)
  • 1/3rd teaspoon red chili powder (optional)
  • 1/3rd 
  • 2 egg
  • Salt as per taste
  • Oil 2 tablespoon (optional)
For Ptato Curry:
  • 2 big potato (cut into squares)
  • Black cumin 1/2 teaspoon(kalunji /kalo jire)
  • 1 teaspoon ginger garlic paste
  • 1/3rd teaspoon turmeric powder
  • 1/3rd teaspoon red chili powder
  • 1/3rd teaspoon coriander powder
  • 1/3rd teaspoon cumin powder
  • 3-4 tablespoon chopped coriander
  • oil 2 tablespoon
  • salt as per taste
For Salad:
  • sliced cucumber 1 cup
  • sliced onion 1 cup
  • sliced carrot 1/2 cup
  • salt as per taste
Final Process:
  • 1 cup oil
Process:

Salad:
  • Mix all the ingredients in a bowl and keep it separately.
Potato curry:
  • Take a non stick pan and place it on medium hit.Add some oil and let it warm up a little bit.
  • Add black cumin and  let it fry for a minute.
  • Add rest of the ingredients and mix it really well.
  • Add 1/2 cup of water and lower down the heat.Cover the lid of the pan and let it cook for 20minutes.
  • During this time please check if it required more water to cook the potato.
  • After the potato's are completely cooked,sprinkle the chopped coriander and turn off the heat.
Stuffing:
  • First we need to cook the chicken. Take a non stick pan and place it on high heat.Add some oil and let it warm up.
  • Then add chicken,ginger garlic paste,salt as per taste and red chili powder. Mix it well and let it cook in high flame till the chicken become soft.
  • Now there can be two ways of using this chicken.First use it as it is. Second grind the fried chicken into a smooth dry mixture. Though I did it with fried chicken this time but I have tried both ways and both comes out to be awesome.
  • Now for my vegetarian friend , this step is completely optional and you can use smashed paneer fried with salt and red chili instead of chicken.
  • Rest of the ingredients will be required in the final process.
 For Dough:
  • Take a big mixing bowl.
  • Add Flour,salt and oil.Crack one egg and directly add that into it.Mix it really well with both your hands.When it will give you feel of small granules then add water to form a dough.You have to kneed the dough really well to get a crispy paratha.Kneed the dough for at least 15minutes and then cover it with a soft wet cloth or wet kitchen roll.
  • Let it rest for at least 30mins before doing the final process.
  • Though I described it almost at the end of the process but it is always good to to this step at first,because that saves lot of time.So during this 30mins time you can easily cook the potato curry.
  • I explained it in this order because it will be easy for you to understand.
Final Process:
  • Take a non-stcick pan and place it in medium heat. Add 1 cup of oil and let it warm up.
  • During that time let's learn how to make the Paratha.Please check the video for that.

     
  •  For those who don't eat chicken they can use the fried smashed paneed which I told you earlier.Even if you don't eat eggs as well you can use paneed along with the rest of the ingredients.
  • But for my non veg fried egg is must,you can make it without chicken as well, in that case you need to add 1-2 teaspoon of sattu which is nothing but a powdered version of chickpeas and instead of 1/2 egg you will required 1 full egg.
  • First fry the paratha in high heat for 5minutes on both the side and then keep the heat into medium for another 10-15mins. So that the egg get cooked completely.Other wise your stuffing will remain uncooked.So make sure to cook both the side on medium heat for 10-15minutes.
  • The quantity I mentioned in the ingredients will give you maximum 3-4 Mughlai Paratha.
  • Place  the Paratha in a serving plate and cut it in square pieces.Now pour the potato curry and salad on the other side of the plate and enjoy it with your friend and family.

Chicken Biriyani

Ingredients: 500gm Chicken, 300gm Basmati Rice, alu,tok doi, ada rosun bata, peaj bata, deshi ghee, lobongo,daruchini,choto elach,jaifol,jayitri,sajire ,samorich, lonka guro,rose water,saffron dhudhe vejano,mitha ator,yellow food color

Making Procedure :
step1  prothome biriyani moshla bananor jonno ekta taoai 1teaspoon sahi jira, 1 teaspoon samorich, 5-6 choto elach,5-6 ta lobongo, 1-2 to daruchini,1/6th of jaifal r 6-7 ta joitri diye halka gorom kore nite hobe. erpor oi mishron ta ekta mixite guro korle ready hoye jabe biriyani moshla.

step2  erpor chicken piece gulo valo kore dhuye jol jhoriye niye tate 4tablespoon tok doi, 2 taspoon ada r 1 teaspoon rosun bata, ekta gota peaj batar ros r 1 teaspoon peaj bata, age banano biriyani moshla 4-5 teaspoon, r 1/2 teaspoon shukno lonka guro mishiye marinate korte dite hobe prai 1 hr.

step3  3te alu chile 1/2 kore kete niye seta yellow food color r nun diye sedhho kore nite hobe. alugulo sedhho hoye gele ota korai ghee diye alpo kore veje nite hobe.

step4  erpor presuure cooker e 4-5 tablespoon ghee gorom kore tarmodhhey age theke marinate kora chicken diye dite hobe. jodi health conscious hon tahole hlf ghee r half tel eo korte paren. ebar chicken ta alpo koshiye niye tate porimanmoto nun r samanno jol (1/2 cup to 3/4the cup) diye pressure cooker bondho kore diye 2-3 te citi diye nite hobe. kichhukhhon standing time deoar por pressure er dhakata khulle dekha jabe j chkn er moshla ta chiken er gaye mekhe ache r telta upore vese utheche.ei telta alada ekta jaigai tule rakhte hobe.

step5  ebar ekta boro jaigai jol gorom korte dite hobe. ebar ekta norom kaporer modhhey 2-4te elach,2-4 lobongo,1-2staraniz diye kaporta mure jole fele dite hobe. ebar otate poriman moto nun diye ekbar taste kore nuner porimanta dekhe nite hobe. mone rakhben je biriyani te vat ta sobcheye beshi important. tai basmati chal rannar antoto 1 hr age vijiye rekhe deben. jol futte suru korle oi chal ta oi futonto jole dhele dite hobe. eta kintu high flame ei hobe. vat ta jakhon 3/4th hoye jabe takhon vater fan fele rekhe dite hobe. ranna korar somoi jodi oi futonto jole 2-3 spoon tel diye deoa hoi tahole vat jhorjhore hobe. jodio eta puropuri optional. vat hoye gele kaporer putlita tule fele dite hobe.

step6  last step ta duvabei kora jai micro-oven e ba normal oven e. jara micro te korte chan tara oven proof bowl neben r jara normal oven e korte chan tara normal kono patro niye patrer tolata valo kore oil grease kore neben. ebar sobar age 2-3 hata vat,tarupor chicken  ta diye upor theke ektu biriyanir moshla r ektu chicken er tel jhoriye dite hobe. er upor abar 2 -3 hata vat diye tate alugulo diye upor theke biriyani moshla r tule rakha telta diye abar upor theke vat diye dite hobe. jodi mangsho r vater poriman beshi hoi tahole ei vabei ro ekta ba duto (jemon proyojon) layer baniye nite hobe.sob seshe upor theke abar biriyani moshla,tule rakha tel r dudhue vejano keshor, r ekta cup e 1/2 cup golap jol r 2-3 fota mitha ator mishiye ota choriye dite hobe. keshar e jodi temon rong na hoi tahole golap joler modhhey aplo ektu food color mishiyeo choriye dite paren.
jara microte korben tara patrer mukh dheke 5-7 min microte rakhlei biriyani ready. r jara normal oven e korben tara patrer mukhta valo kore bondho kore ata makha diye seal kore deben. ebar ekta taoa gorom kore taoar upor patrota rekkhe dhimi ache prai 20-30 min etake hote dilei ready chicken biriyani.
